Cottage Pie

Cottage pie is like Sheppards Pie except it uses ground beef instead of ground sheep. Start by sautéing one large onion with a little olive oil. once its translucent add 1 pound of ground beef and cook it till its mostly all brown. Add seasonings and frozen veggies. I like rosemary, thyme, parsley, dill, two cloves of garlic, salt and pepper. I add one of those little boxes of mixed veggies (peas, carrots, corn and green beans). You can also add veggies you have left over that need using. Some times I put left over broccoli or spinach in it. I also chopped up three and a half hot dogs. Lets be honest, they are tasty. Then I put it in a casserole dish. It looks a little something like this:

Next, we make mashed potato!

I did it by putting potatoes in the microwave and pressing the potato button. Then I mashed it with a fork. Ok actual recipe. I mixed in soy milk, probably about 1 cup, 1 table spoon of margarine, 2 tea spoons of salt and a bit of pepper. Mix in beef soup until the potatoes are smooth. Pour a bit of the beef broth onto the ground beef for flavor. Then scoop the mashed potato onto the beef:

Spread the mashed potato around with the spatula, smoothing it out.

Then pop it in the oven at 350 for 30 to 40 minutes or until the top is slightly browned.
